Description
Description
Aging time:
- 15 to 18 months on lees
Alcohol content:
- 12% vol.
Serving temperature:
- between 6°C and 8°C
Blend:
- Predominantly a blend of Cabernet Franc complemented by Pineau d’Aunis and Pinot Noir.
Terroir & Soil:
- The soil rests on “tuffeau stone” covered in places with granitic sands, clay or flint, giving profiles of floral, lively and saline wines.
Artisanal Expertise:
- Grape selection and preservation: hand-harvested.
- Selection of the must to retain only the finest and highest-quality wines.
- Wine resting after alcoholic fermentation: this allows for a gentle settling of the yeasts, resulting in a beautiful harmony of aromas.
- Lees stirring for 3 months: enhancing the complexity of the aromas.
- Extended aging on the lees, 15 months in the heart of the tuffeau cellars: resulting in fine, elegant bubbles and fresh fruit.
- Slow and gentle riddling, adapted to the cuvée, carried out by hand.
- A minimum of 2 weeks of rest on the lees before disgorgement, for a crystal-clear wine.
- Low dosage, between 8 and 10g, to maintain tension on the finish.
Tasting Notes:
The nose opens with a delicate fruity bouquet. The palate is bursting with freshness, offering aromas of red fruits (raspberry, wild strawberry) and notes of white-fleshed fruits.
Ideal as an aperitif, or at the end of a meal with a strawberry tart or fruit salad.
