Tasting notes:
Pale golden hue with slightly golden tints. The silky nose suggests a great deal of freshness mixed with fruity honeyed notes. Excellent balance on the palate, with aromas of white-fleshed fruit.
This sparkling wine can be enjoyed from the aperitif through to dessert, paired with oysters or strawberry charlotte, for example.
Artisanal savoir-faire:
- A selection of the musts that give this cuvée its unique identity.
- Vinification in our cellars: selection of the grape juices.
Resting of the wine after alcoholic fermentation: this does not rush the wine too much, allowing the yeasts to settle slowly and the aromatic expression to develop harmoniously - Bâtonnage (stirring) of the lees for 3 months: ensuring the purity of the Chenin and the complexity of the aromas.
- Traditional method aged ‘sur lattes’ in our underground cellars at a constant temperature of 12°C.
- Slow, gentle riddling tailored to the cuvée, carried out by hand.
- Minimum of 2 weeks of rest “sur pointe’ (neck down) before disgorgement resulting in a crystal-clear wine.
- Low dosage, between 8-10g, to preserve the tension of the Chenin on the finish.
