Vineyard:
- Our plots, on clay-limestone soils, are located in the terroir of the Haute Vallée de l’Aude.
Grape varieties:
- 100% Pinot Noir
Vinification:
- Fermentation in open vats with regular punch-downs to promote maceration and limit oxidation. The wine then undergoes light barrel aging for 4 months.
Tasting notes:
- Garnet robe with bright highlights, aromas of red berries, and subtle notes of violet and sweet spices. This Pinot Noir, grown on the cool slopes of the Haute Vallée de l’Aude, reveals a silky and elegant palate with well-integrated tannins.
Food pairing:
- Perfect to enjoy with duck breast and cherries, mushroom risotto, or characterful cheeses such as Saint-Nectaire, Morbier, or Tomme des Pyrénées.
